黃衣黄蒸及蘖第六十八名麥黄衣一作黄衣出熟蒸之槌箔上敷席置麥於上攤令厚二寸許六月中取小麥净淘訖於瓮中以水浸之令醋漉氣候麥冷以胡枲覆之七日看黃衣色足便出曝之令乾去胡枲預前一日刈薍葉薄覆無薍葉者刈胡枲擇去雜草無令有水露作用麥者皆仰其衣為勢今反颺去之作物必不善矣而已慎勿颺簸齊人喜當風颺去黄衣此大謬凡有所造作黃蒸法好熟便下之攤令冷布置覆蓋成就一如麥法六七月中味生小麥細磨之以水溲而蒸之氣餾慮其所損亦勿颺之

所壞者車轍中乾土木一掬著甕中即還好凡酷瓮下皆湏安塼石以離濕潤為姙娠婦人作大酢法粟米熟飯三斗攤令冷任瓮大小依法加之以滿為七月七日取水作之大率麥一斗勿揚簸水三斗七日旦著井花水一椀三七日旦又著一椀便熟常置一瓠瓢於甕以限先下麥次下水次下飯直置勿攪之以綿幕甕口拔刀橫瓮上一內甕中則壞酢味也挹酢若用濕器鹹器秫米神酢法石秫米三斗無秫者黏黍米亦中用隨瓮大小七月七日作置瓮於屋下大率麥一斗水一擘麵破勿今有塊子一頓下釀更不重投又以水就瓮裏搦破小以向滿為限先量水浸麥訖然後淨淘米炊為再餾攤令冷細日亦一攪一月日極熟十石瓮不過五斗澱得數年停久為驗其塊痛攪令和如粥乃止以綿幕口一七日一攪二七日一攪三七得食饙黍亦不得人啖之淘米泔即瀉去勿令狗䑕又法一斗水三斗粟米熟飯二斗随亦以七月七日取水大率麥初作時下一分當夜即沸又三七日更炊一分投之又三日復投瓮大小以向滿為度水及黄衣當日頓下之其飯分為三分七日刀益水之事溢即加甑一分但綿幕瓮口無橫又法九升粟飰九升一時頓下亦向滿亦七月七日作大率麥一升水中如壓酒法毛袋壓出則貯之其糟别甕水澄壓取先食也為限綿幕瓮口三七日熟前件二種酢例清少澱多至十月粟米麴作酢法率笨麴末一斗井花水一石粟米飯一石明七月二月向末為上時八月四月亦得作大飯著盆中或拷拷中然後冩飯著瓮中冩時直傾之勿以手撥飯旦作酢今夜炊飯薄攤使冷日未出前汲井花水斗量著瓮中量釅少澱乆停彌好凡酢未熟已熟而移甕者率多壞矣熟則無忌尖量麴末冩著飯上慎勿撓攪亦勿移動綿幕甕口三七日熟美瓮著之接取清別

大麥酢法水十五日作除此兩日則不成於屋裏近户裏邊七月七日作若七日不得作者必須收蔵取七日是以用造簸訖淨淘炊作再餾飯揮令小煖如人體下釀以杷攪置甕大率小麥一石水三石大麥細造一石不用作米則科麗以棘子徹底攪之恐有人髪落中則壞醋凡醋悉爾亦去髪則還之綿幕瓮口三日便發發時數攪不攪則生白醭生白醭則不好體投之杷攪綿幕三四日㸔水清攪而嘗之味甜美則罷若苦者好六七日净淘粟米五升米亦不用過細炊作再餾飯亦揮如人淳釅一盞醋和水一椀乃可食之八月中接取清别瓮貯之盆合更炊二三升粟米投之以意斟量二七日可食三七日好熟香美氣勿令生水入瓮中若用黍秫米攪弥佳白倉粟米亦得泥頭得停數年未熟時二日三日湏以冷水澆甕外引玄熱燒餅作酢法大小任人增加水亦當日頓下初作日軟溲亦七月七日作大率麥一斗水三斗亦隨瓮度投當味美沸定便止有薄餅縁諸麵餅但是燒者皆得投之數升麵作燒餅待冷下之經宿看餅漸消盡更作燒餅投凡四五酒酢法作醋大率五石米酒醅更着麴末一斗麥一斗凡釀酒失所味醋者或初好後動未壓者皆冝廻杷再度攪之春夏七日熟秋冬稍遲皆美香清澄後一月接取别井花水一石粟米飯两石攤令冷如人體投之杷攪綿幕甕口每之器貯

動酒酢法用水三斗合瓮盛置日中曝之雨則盆盖之勿令春酒壓訖而動不中飲者皆可作酢大率酒一斗移動撓攪之數十日醋成衣沈反更香美日久彌佳水入晴還去盆七日後當臭衣生勿得怪也但停置勿又方酒兩大率攪綿幕瓮口二七日熟美釅殊常矣石麥一斗粟米飯六斗少暖投之杷神酢法三斛凡二物溫溫煖便和之水多少要使相淹漬水要用七月七日合和瓮須好蒸乾黄蒸一斛熟蒸䴸內大瓮中經二三日瓮熱必須以冷水澆之不尔酢壞其上有白多則酢薄不好甕中用經再宿三日便壓之如壓酒法壓訖澄清黄蒸及䴸者用麥一石粟米飯三斛合和之方與黄蒸同盛置醭浮接去之滿一月酢成可食初熟忌澆熱食犯之必壞酢若無綿幕之不得蓋如前法瓮常以作糟糠酢法臭大率酒糟粟糠中半麄糠不任用細則泥唯置甕於屋內春秋冬夏皆以穰茹甕下不茹則後下糠糟於筻外均平以手按之去瓮口一尺許便止汲冷水遶中間收者佳和糟糠必令均調勿令有塊先內荆竹蓃於甕中然以椀挹取蓃中汁澆四畔糠糟上三日後糟熟發香氣夏七日冬蓃外均澆之候蓃中水深淺半糟便止以蓋覆瓮口每日四五度初候好熟乃挹取蓃中淳濃者別器盛更汲冷水澆淋味薄乃止二七日嘗酢極甜羙無糟糠氣便熟矣猶小苦者是未熟更澆如十日冬得六十日後淋澆者止得三五月供食也淋法令當日即了糟任飼猪其𥘉挹淳濃者夏得二酒糟酢法下壓糟極燥者酢味薄作法用石磑子辣糓令春酒糟則釅頥湏糟亦中用然欲作酢者糟常濕糟常居多和訖臥於酳甕中以向滿為限以綿幕瓮口七日後酢破以水拌而蒸之熟便下揮去熱氣與糟相半必令其均調大率水淋之春秋作者冝溫臥以穰茹瓮湯淋之以意消息之香熟便下水令相淹漬經宿酳孔子下之夏日作者冝冷作糟酢法壓取清汁兩石許着熱粟米飯四斗投之盆覆密用春糟以水和搦破塊使厚薄如未壓湏經三日夏停之瓮置屋下隂地之處泥二七日酢熟美釅得經食經作大豆千歲苦酒法炊曝極燥以酒醅灌之任性用大豆一斗熟沃之漬令澤此為率多少以

作麥豉法麵以水拌而蒸之氣餾好熟乃下撣之令冷手挼七月八月中作之餘月則不佳唻治小麥細磨為徧灑潤之更蒸氣餾極熟乃下撣去熱氣及煖內瓮中盆蓋於蘘令碎布置覆蓋一如麥黃蒸法七日衣足亦勿簸揚以鹽湯周貫屋裏懸之紙袋盛籠以防青蠅塵垢之汙用時全餅着湯中煑糞中燠之二七日色黑氣香味便熟摶作小餅如神麴形繩穿為勝豆豉打破湯浸研用亦得然汁濁不如全煑汁清也之色足漉出削去皮粕還舉一併得數遍煑用熱香美乃八和齏反初稽第七十三
