14 | 白司味平心 齊味,以奉五味,以炮以燔、五味。 六和時味燔炙煎熬適和甘受和。 五味之變、鹽、梅,煎和滋味,拂徹羶腥、調節、滑甘、膳禽。凡用禽獻,春宜羔豚,膳膏薌,夏宜腒䐹膳膏臊,秋宜犢,麛膳膏腥,冬宜鮮,羽膳膏羶,割烹,水火之齊,刀匕是供,君子逺庖㕑,味得其時,烹餁,鸞刀,羞服之式、膳羞,珍用八物。 炮鼈王日一舉鼎火化 ,身踐,秩膳,不給於鮮。洎饋,膳獻,刲之刳之。 糔溲,捶而食之。良庖: 㕑車宿肉調之以醯醢切葱若薤,實醯以柔之,屑桂與薑孔和之齊之,沉泛緹盎之齊,燔炮烹飪,約水燥薪爨火以觀文、武之用而已,燒尾。 |
